Shrimp Creole
1 ½ c. chopped onion
2 med. Green peppers, chopped
¼ c. butter
1 c. water or wine
⅛ tsp cayenne
2 tsp parsley
3 c. cooked rice
1 c. chopped celery
2 cloves garlic, minced
15 oz. Can tomato sauce
1 ½ tsp salt
2 bay leaves, crushed
1 lb shrimp
Sauté onion, pepper, celery and garlic in butter. Remove from heat and stir in tomato sauce, water and seasoning. Simmer, uncovered, 10 minutes, adding water if needed.
Stir in shrimp, heat to boiling. Cover and simmer over medium heat 10-20 min. Serve over rice.
