Roasted Salmon and Garlic Potatoes
1 ½ cups water
2 TB margarine or butter
¼ t garlic powder
¼ t salt
⅛ t pepper
¾ cup milk
Paprika
2¼ cups Hungry Jack Mashed Potatoes
2 T chopped fresh chives
1 egg beaten
1 (1 ½-lb) salmon fillet cut into 6 serving size pieces
Heat oven to 425. Line 15x10x1 inch baking pan w/foil spray with nonstick cooking spray.
In medium saucepan bring water, butter, garlic powder, salt and pepper to a boil. Remove from heat; add milk. Stir in potato flakes, chives and egg until well blended.
Place salmon pieces skin side down in pan from above. Top each piece with about ½ cup potatoes, sprinkle with Paprika. Bake @ 425 for 20-25 minutes. Or until fish flakes easily with a fork.
