Creole Gumbo
½ cup chopped green pepper
½ cup red and yellow peppers
½ teaspoon of salt
1 tablespoon Worcestershire
¼ teaspoon ground red pepper
16 oz can of stewed tomatoes
¼ cup dry sherry
8 oz cooked crab meat
sausage (optional)
Olive oil
2 med. stalks of celery chopped
1 small onion chopped
1 garlic clove minced
½ teaspoon old bay seasoning
1 tablespoon parsley
8 oz tomato sauce
10 oz pkg.frozen okra partially thawed (optional)
8 oz shrimp cut into bite size chunks
8 oz scallops (optional)
2 bay leaves
In a large saucepan cook peppers, celery and onion until tender. Stir in salt, garlic, Worcestershire, old bay seasoning, red peppers, tomato sauce and stewed tomatoes, add bay leaves. Simmer covered for 45 minutes, add remaining ingredients, and continue simmering covered for 15-20 minutes until okra is tender.
Good with white rice.
